The coconut is harvested only once it has fallen from the tree when the flesh is dry enough for eating. Traditionally the coconut is cut from the tree whilst the flesh is still moist. This is prefered by locals over the drier, harder-fleshed coconut which we are perhaps more familiar with in Europe.
The husks of the coconuts are removed at the farm before they are delivered to the local factory where they are taken out of their 'hairy' shells and cut into pieces by hand. They are then packed and delivered to branches of Waitrose in the UK often within 48 hours.
So unlike the desiccated coconut that is often used in confectionary products or the coconuts you might win at the fairground, this coconut is completely fresh from the tree. And of course it is entirely ready-to-eat so you don't have to try all manner of creative ways to try breaking in to it!

The BSOC is a Fairtrade Association of over 80 small farms who live in four communities within an area known as 'Ekumfi'. This particular variety of pineapple is grown over a 14-15 month period which is longer than more familiar varieties of pineapple that are often ‘induced’ by chemicals so that they can be harvested sooner. The sugarloaf has a unique elongated shape and a translucent, white flesh. It has a wonderful sweet taste and is low in acidity so that it simply melts in the mouth. You really do have to taste this pineapple to believe how good it is!
Weeding is carried out by hand and the weeds are used to mulch and shade the plants. The ripe pineapples are then harvested, also by hand, and then taken to designated collection points where they are picked up by a vehicle everyday and delivered to the factory for cutting and packing.
Any inedible parts of the pineapple are composted and only the freshest, ripest cut-fruits are sent to Waitrose so you don’t have to worry about disposing of any waste!
Some of the benefits of trade that the farmers and their communities have seen over the past ten years include investment in roads and electricity and the construction of bore-holes to provide fresh drinking water.
